Treasure Chest Oatmeal
 
Ingredients:
 

½ cup old fashioned or quick cooking rolled oats (not instant)

1 cup water

2 dates, diced

2 dried apricots, diced

2 dried plums (prunes), diced

1 tablespoon chopped walnuts

1 teaspoon cinnamon

¾ cup nonfat milk
 
 
Directions:
 

Combine first 7 ingredients in small saucepan. Bring to a boil over medium-high heat; then reduce heat to low and cook for 5 minutes for old fashioned oats or 1 minute for quick cooking oats. Add milk to saucepan, and warm for 1 additional minute.

Makes 1 large serving

Note: recipe can easily be increased to make 2, 3 or 4 servings.

 

Nutrition Information per Serving:

388 calories, 7.9 g total fat, 1.1 g saturated fat, 3.7 mg cholesterol, 9.3 g dietary fiber, 15.0 g protein, and 100 mg sodium. One serving of this recipe provides an excellent source of dietary fiber, calcium, phosphorus, potassium, and vitamin A.

This recipe is very filling for breakfast or any time of day. You shouldn’t be hungry for 3 to 5 hours. I prefer the texture of old fashioned oats, but if your time is short the quick cooking oats work just as well.
